Have a setting that will either warn/or require that a freight cost/estimate is entered for quotes/sales orders for particular customers. Some customers will not pay freight charges that are not included with quotes, or want to use different terms that what you send them (such as Pre Pay and Allowed).
A warning would at least prompt you before you accepted a PO.

Since we often write SO's on the fly w/o an entered quote, I would LOVE to have the SO warn me that we are about to bill freight to a customer who is listed as freight collect, and ask if we are absolutely, positively sure we want to bill freight. Having to credit freight off, and eat it, is not my idea of a great lunch... I make sure customer defaults are listed as "UPS GR COLL" or some similar way, but shipping doesn't always see it. If something big and blinking came along to make them actually look at the PO, that would be swell.
