So one of the problems faced by the personnel here is how to modify Routings and BOM after estimate and work order are entered. I have found the functions to do so (at least I believe I have) though they are restricted to view only mode. How is this modified?

In Work order Defaults SD-B or SD-Q, Setup-- there is a View only setting for WO BOM and WO routing. Yours must be set to yes.
