We just upgraded to Pervasive 11. Should we be running it as a service or an application?

As a Service.

Otherwise you will have to "Run" pervasive every time you need to open Evo.

On the client side I don''t think it matters much and in a true server environment you have no choice. When installing the Workgroup version I would choose Service.
