Is there a setting that I can enter that will allow us to utilize all of the space in the data fields? As an example, in IN-B there is quite a bit of white space left in the description field, but I can only enter 26 characters leaving almost half of the visible field space unused. Same in the Customer address fields and many others.

The fields are a specified number of characters regardless of the size of the box on the screen. IIIIIII takes much less space than WWWWW. UT-H will tell you the number of characters in the fields. Item Description (and most description and address fields) is 30.

Not easily. We would have to change the data structure and update hundreds of programs and reports. Evo has virtually unlimited Notes capability you can use to enter more information related to anything.
