Is there a way to upload the company logo and a picture that would print out on the Acknowledgements, Invoices, Packing Slips, Quotes?

Absolutely.  That is one (of many) features of the RTM editor.  You recently subscribed to the WebEx video library and there is a session that covers the RTM editor.
