It is the average days from the date of an invoice that a customer takes to pay you.  There is a default setting that determines the algorithm which can be a straight average since the beginning of time or a weighted average towards more recent payments.  You can use SM-J-O to manually calculate it for a specified date range and in that case there is a third algorithm which is a weighted average by dollar amount.
