How do I restrict access in AR so the person can only access the history button to record/edit a call?

Give them CM-A access but not AR-A and use SD-Q to block CM-A access to AR-A.

So if they accidentally change or delete something in  
CM-A, it won't transfer over into the customer info in AR?

There is also a setting to Coordinate CM & AR edits - you need to set that to N
